Easy Coconut Chicken
Coconut chicken is a culinary creation that combines tender chicken with the rich and tropical flavor of coconut. This dish is savory and sweet, creating a delightful experience for the taste buds. This is one of the few meals our entire family will eat.

- 2 boneless chicken breasy
- 2 14 oz. coconut milk
- 2 tbsp red or green curry paste
- 1 tbsp olive oil
- 1/3 cup brown sugar
- 2 tsp fish soy or liquid aminos
Trim excess fat off of chicken breast, if desired.
Cut the chicken in half through the long side of the chicken breast to make the breast smaller in size.
Cut the chicken into strips and lightly coat with salt and pepper.
Heat olive oil over medium heat in a large pan and sauté chicken for 5-10 minutes
Once chicken start to turn opaque, add coconut milk, curry paste, brown sugar, and liquid aminos.
Blend together and turn on low for 5 - 10 minutes until a slow boil is achieved.
Serve over rice (optional* add chopped cilantro)
