  • 2 boneless chicken breasy
  • 2 14 oz. coconut milk
  • 2 tbsp red or green curry paste
  • 1 tbsp olive oil
  • 1/3 cup brown sugar
  • 2 tsp fish soy or liquid aminos

Instructions
 

  • Trim excess fat off of chicken breast, if desired.
  • Cut the chicken in half through the long side of the chicken breast to make the breast smaller in size.
  • Cut the chicken into strips and lightly coat with salt and pepper.
  • Heat olive oil over medium heat in a large pan and sauté chicken for 5-10 minutes
  • Once chicken start to turn opaque, add coconut milk, curry paste, brown sugar, and liquid aminos.
  • Blend together and turn on low for 5 – 10 minutes until a slow boil is achieved.
  • Serve over rice (optional* add chopped cilantro)
