Easy Corn and Honey Muffins
This recipe pairs well with many dinner dishes especially chili or any other hot soup. After cooking, add butter to warm muffins for more flavor!

- 2 packages Jiffy corn muffin mix
- 1/4 cup honey
- 2/3 cup milk
Preheat oven to 400F
Combine all ingredients in a mixer bowl. Pro-tip (Crack eggs before adding muffin mix to avoid getting shells in your muffins.)
Mix using beaters but be careful to not over mix. Mix will be slightly lumpy.
Using a muffin pan, add 12 cupcake liners and spray with a non-stick oil such as corn oil or canola oil.
Fill each cupcake liner approximately 3/4 full.
Cook for approximately 18-20 minutes until golden brown.
You can slice the muffins in half while warm and butter if desired.
