Easy Corn and Honey Muffins

This recipe pairs well with many dinner dishes especially chili or any other hot soup. After cooking, add butter to warm muffins for more flavor!

Ingredients
  

  • 2 packages Jiffy corn muffin mix
  • 1/4 cup honey
  • 2/3 cup milk

Instructions
 

  • Preheat oven to 400F
  • Combine all ingredients in a mixer bowl. Pro-tip (Crack eggs before adding muffin mix to avoid getting shells in your muffins.)
  • Mix using beaters but be careful to not over mix. Mix will be slightly lumpy.
  • Using a muffin pan, add 12 cupcake liners and spray with a non-stick oil such as corn oil or canola oil.
  • Fill each cupcake liner approximately 3/4 full.
  • Cook for approximately 18-20 minutes until golden brown.
  • You can slice the muffins in half while warm and butter if desired.
