This is one of my favorite recipes and friends and family are always asking me to make it for family gatherings. This goes well with any chicken dish or for taco night. You can use this rice the next day with eggs over easy for a Huevos rancheros style breakfast. The special ingredient is salsa and tomato Bullion.

Delicious Mexican Rice
Ingredients
- 2 cups white rice
- 1 tbsp Grapeseed oil or olive oil
- 3 cloves Minced garlic fresh preferred
- 2 cups warm water
- 2 cups salsa
- 1 tbsp tomato bullion
- 1 tbsp chili powder
- 1 tsp black pepper
Instructions
- Heat oil in large pot over medium heat.
- Add rice and keep stirring until rice becomes golden brown.
- Once rice is golden brown, add garlic and stir for 1 minute
- Add water, salsa, pepper, chili powder, and tomato. bullion. Stir ingredients and keep heat on low, the rice should be done after 20 minutes.
- After 20 minutes, remove from heat and fluff the rice with a fork. If the liquid has not completely absorbed into the rice, cook for 5 more minutes.
- Enjoy
