Ingredients
- 2 boneless chicken breasy
- 2 14 oz. coconut milk
- 2 tbsp red or green curry paste
- 1 tbsp olive oil
- 1/3 cup brown sugar
- 2 tsp fish soy or liquid aminos
Instructions
- Trim excess fat off of chicken breast, if desired.
- Cut the chicken in half through the long side of the chicken breast to make the breast smaller in size.
- Cut the chicken into strips and lightly coat with salt and pepper.
- Heat olive oil over medium heat in a large pan and sauté chicken for 5-10 minutes
- Once chicken start to turn opaque, add coconut milk, curry paste, brown sugar, and liquid aminos.
- Blend together and turn on low for 5 – 10 minutes until a slow boil is achieved.
- Serve over rice (optional* add chopped cilantro)
